Who doesn’t love potato salad ? Let me introduce the fast and easy way to do potato’s Potatoes! 🥔
Serving 2 –
4 medium sized potatoes, 1 quarter sliced wedges of Green & Red peppers, 1 quarter sliced wedge of onion, & 4-5 sticks of celantro washed and diced, 3 tablespoons of mayonnaise, 2 tablespoons of garlic powder,onion powder & all purpose seasoning.
Peel and cut your potatoes in fours or six’s squares depending on size. Add in pot of water (water covers the potato’s) add a pinch of salt to help tenderize and flavor to taste your potatoes. Medium heat let boil. Once boiled and potatoes are tender drain water out add your dry seasonings and diced vegetables and celantro add your mayonnaise mix well and serve.
Hint: left overs can be refrigerated and eaten cold the next day. Or you can add you celantro as garnish. You can also add 2 hard boiled eggs to your salad.
